Fruit paste

An amazing alternative to sugar

Ingredients:

  • 1/2 cup dried fruit (any dried fruit can be used, but avoid the ones with added sweetener),
  • 1 cup water.

Preparation:

  • add the dried fruit to the container and pour the water over the fruit,
  • place the container in the refrigerator and let it soak for at least 1 hour,
  • after 1 or 2 hours blend the mixture in a high-speed blender until smooth, add more water if needed.
Note: If you are planning to use the paste in baking recipes, use as little water as possible while blending. You can even discard some of the soaked water before blending. Keep in mind that adding a runny paste to the baking recipe is essentially the same as adding extra water.

Note: For a different flavor profile, add a vanilla bean while soaking, or a pinch of cinnamon and fresh lemon juice while blending.

Storing:

Fruit paste can be stored in the refrigerator for at least one week.
Fruit paste can be frozen for several months. Fruit paste | Cook With ❤
